The amount of scientific data relating to the effects of diet on food tolerance induction is ever growing. The discovery that cereals stimulate the production of IL10 (Interleukin 10) and therefore contribute in impeding a body from developing allergies reintroduces the theme of celiac disease as a situation that is not so much genetic as it is linked to the interference of the environment and to the loss of control. And for this reason curable.
