An important beginning: “raw, fresh and colorful”
Begin every meal and every snack with a bite of fresh and raw fruit or vegetable. This sends a message to the immune system that says “all is well, friendly substances are on their way”. You can choose:
- all the fresh seasonal fruit
- all types of vegetables easy to eat in tidbits (and with your fingers)
- freshly squeezed juices
- fresh vegetables centrifuged in the juicer
- fresh fruit cocktails (macedonia)
- plain fresh fruit shakes
Even a bite it's enough: next to everyone's plate, you can place a small bowl containing a carrot stick, a small apple and a fig. Not only is this good for you, it's also as pretty as a small bouquet.
Be careful to choose only fruits and/or vegetables that are compatible with your level of intolerance.
Before you go shopping
Check the yes and no foods list. Better yet, print a copy and keep it handy. Try to compile a list of the things that you'll need for the week, taking also into consideration dinners with friends, snacks while you're out, etc.

What to buy
At least at the beginning, read the contents labels carefully, especially when you find the words “hydrogenated fats” or “trans-esterified”. Don't expect to find the words “this product contains nickel”: today nickel is almost everywhere (especially as a residual of industrial fats production), therefore your best protection is your attention to these details.
In order to follow the nickel diet without problems, we suggest that you always keep a good supply of the following allowed products at home:
- Fresh fruit and vegetables: consult the list of permitted foods and avoid products that are high in nickel.
- Beans and legumes, except for lentils. Completely avoid canned foods (tin plate).
- High quality oil, single seed or extra virgin, cold pressed and not contained in a tin.
- Butter (high quality), cream, yogurt, cow or vegetable milk, your choice, but no metal containers.
- Eggs
- Various flours, best if whole grain: wheat, buckwheat, chestnut, rice (no oats or corn).
- Ready made dishes and soups, as long as they're not preserved in metal containers.
- Meats, cold cuts and fish, fresh or preserved in glass containers.
- Coffee, tea of all kinds, infusions.
- “Regular” bread (without added fats, corn flour, etc.).
- Homemade sweets, cakes or crepes prepared with butter.
- Avoid aluminum foil. You can substitute it with oven paper.
To add flavor, keep a good supply of basil, parsley, onion (a small amount) and minced sautéing vegetables which can be readily found in the freezer section of the supermarket. You can also keep a variety of fresh herbs like chives, mint and oregano on the windowsill. Jars of hot pepper, cinnamon, nutmeg, cloves and curry are handy, too.
