The way in which you eat is responsible for the activation of adipokines, a class of substances that are produced in adipose tissue that may interfere greatly with metabolism, insulin resistance and inflammatory reactions. It is certain that adipokines are involved in the insurgence of and maintenance of rheumatoid arthritis.
Adipokines are a relatively recent discovery (the first one, leptin, was only discovered in 1994) but actually their effects are ubiquitous and systematically present. They're involved in metabolism, hormonal regulation, fertility, inflammatory reactions and arthritis. However many people are not even aware of their existence, let alone their importance.
To get an idea of how the lack of knowledge about the action of these substances clashes in medicine, just imagine entering the Rheumatology department and asking if a change in diet could help arthritis sufferers. Usually this question receives a sarcastic response or, at best, the consideration that losing a little weight is a good thing. However, in 2007 a well-documented study on the role of adipokines in rheumatology and the therapeutic possibilities of these discoveries was published in Nature Clinical Practice Rheumatology (Lago F et al, Nat Clin Pract Rheumatol. 2007; 3(12):716-724).

In short, adipokines are considered to be the most important emerging mediators of immune and inflammatory response. The major ones known today are: Leptin, Adiponectin, Resistin and Visfatin. All of these derive from a diet that activates insulin resistance and thus the principles of the GIFT diet can be therapeutically applied to reduce and regulate their production.
The role of diet and, particularly, of food intolerances in joint problems and arthritis has been known since 1994.when the first studies on the therapeutic action of intolerance regulating diets with the DRIA test were made public. The most recent works confirm it in a clear manner.
